You can set message retention to "Keep all messages and keep edit and deletion logs" from https://my.slack.com/admin/settings#data_retention. This will work for public channels. If you need to capture all edit and deletion logs for private channels and direct messages as well, please check the Retention Policy of your Slack Enterprise account.
